Apple's privacy notice says many models run entirely on the device, and bigger requests go to Private Cloud Compute, where the data "is not stored or made accessible to Apple." Duck.ai lets you chat with models from providers such as Anthropic and OpenAI without an account. Its privacy policy says it strips your IP address before passing your prompt on, and its agreements stop providers training on prompts and require deletion within 30 days, with limited exceptions.
